Dinner Tonight : French Dip Sandwiches with French Onion Soup

This was so tasty, very easy and pretty budget friendly.

~ Ingredients ~

- French onion soup mix
- 1 Large onion, sliced
- 1 lb thin sliced deli roast beef
- Sub Rolls ( I like cuban bread rolls )
- 1 pkg swiss cheese slices
- Water
- Beef Broth/boullion cubes in water

In a medium sized kettle pot add 7 cups of water and soup mix.
Add sliced onion and cook over medium heat until onion is tender.
In another pot, add about 7 more cups of water and about 4-5 beef boullion cubes, bring to boil until cubes are dissolved.
Add roast beef and turn down heat to medium low to keep warm.
Cut rolls open and add the meat and top with cheese.
Broil for about 5 minutes at 350 degrees.
Ladel your soup into a bowl and ENJOY!! You can use the soup as your au ju. :-)

Dinner Tonight : Cheesy Tator Tot Casserole

This is a cheeesssyy, creamy recipe that will please both your kids and the adults in the household. Probably the best part about it is its pocket book friendly. I will also probably put this on my "Meals on a Budget" page.

~ Ingredients ~

- 1 lb Ground Beef or Turkey
- 2 Cans Cream of Mushroom Soup
- 1 pkg Fresh Mushrooms ( you can use canned to keep the price down )
- 1 Bag of your favorite frozen tator tots
- 6 Slices of White American Cheese
- Salt and Pepper

Brown the ground beef/ turkey over the stove until cooked all the way through, drain any grease.
Add both cans of cream of mushroom soup as well as the mushrooms. Stir until mixture is nice and creamy.
Add salt a pepper to taste.
Pour mixture into a glass baking dish.
Place tator tots on top in an even layer.
Bake according to directions on the bag of tator tots.
Once tator tots are nice and crispy, add the slices of cheese on top and place in the oven for a couple minutes or untl cheese is melted.

Dinner Tonight : Pan Seared Chicken Thighs with Risotto and Asparagas

I have never tried this before and actually I kind of made it up while in the grocery store.

~ Ingredients ~

- Boneless skinless chicken thighs
- 1/2 of a large onion, chopped
- chicken broth ( carton will work because you will also need the broth for risotto )
- garlic glove
- lemon juice
- 2 tbsp olive oil
- Rosemary sprigs
- Salt and Pepper
- 1-2 tbsp flour
- 1-2 tbsp butter

Coat a saute pan with olive oil.
Once hot, add onion, minced garlic and rosemary.
Salt and pepper the chicken thighs.
Once onion is tender, add the chicken thighs on a medium heat.
Brown chicken on the top and bottem and cook until juices run clear and chicken is cooked throughout.
Add a splash of lemon juice to chicken towards the end for flavor.
Remove chicken.
With the rest of the juices from cooking the chicken, add a tablespoon of butter and flour to create a pan sauce.
Whisk together until sauce is creamy.
Remove rosemarry sprig.
Pour sauce over chicken.
Cook risotto according to package directions.
With the asparagas, I am going to saute them in olive oil and salt and pepper.

Dinner Tonight : Italian Sausage and Peppers Over Rice

This meal is one my whole family enjoys. Anything with italian sausagee in it is a winner for me!
~ Ingredients ~

- One package Italian Sausage ( hot, mild or sweet whichever you like )
- Green, yellow, red and orange peppers,Julianned
- Large yellow or white onion, julianned
- 4 tablespoons butter
- Cooked white or brown rice
- Salt and Pepper
- Garlic powder ( or minced if you prefer )

Preheat your oven to 400 degrees
Cut the sausage into bite size slices and cook in pan until no longer pink.
In a large glass baking dish, add the onions and peppers as well as the sausage.
Add the salt, pepper and garlic and stir to coat all of the pieces.
Cut 4-6 slices of butter and place on top of sausage and peppers.
Cook in oven until peppers and onions are tender.
My family and I like the sausage a little crispy on the outside so we broil it for a couple minutes or until crispy on top.
Serve over top of the rice and use the juices as sort of a sauce and ENJOY!!!

Dinner Tonight : Vermicelli with Sausage and Spinach

Courtesy of the Better Homes and Gardens New Cookbook 15th Edition. I use this awesome book a lot because the recipes are just to die for.
~ Ingredients ~

- 1lb Cooked smoked sausage ( cut into halved slices )
- 3/4 Chopped Lg Onion
- 2 Lg Cloves of Garlic, chopped
- 2 tsps Olive Oil
- 2 14oz Cans of Chicken Broth
- 1/4 Cup Water
- 8 Ounces of packaged vermicelli or angelhair pasta
- 1 9oz package of fresh prewashed baby spinach
- 1/4 tsp black pepper
- 1/3 cup whipping cream

In a 4 qt dutch oven cook the sausage, onion, and garlic in hot oil over medium-high heat until sausage is lightly browned and onion is tender.
Add broth and water to dutch oven and bring to boiling.
Add pasta, cook it for 3 minutes while stirring frequently.
Add spinach and pepper; cook about one minute more or until spinach wilts.
Stir in cream and serve immediatly.
I'm very excited about trying this one. It just sounds so good! I hope you all enjoy it too ;-)

Dinner Tonight : Burritos with Refried Beans, Chorizo and Potatoes

This recipe is one that I have never tried before. I got it from my neighbor who got it from her daughter. So we're going to try it tonight and it sounds AMAZING!!!!
~ Ingredients ~
- Chorizo sausage
- Refried Beans
- Fried cubed potatoes
- Cheese
- Tortillas
- Any other toppings that you love on burritos. I'm adding sour cream, lettuce and tomatos and probably some salsa too.

Cook the chorizo out of the casing until crispy and also fry the potatoes until crisy.
Warm up the refried beans and spread on the tortilla.
Add the chorizo, potatoes and cheese and whichever other toppings you want and chow down!! I can't wait to try these. They just sound soooo delish! Shout out to Chyree for the awesome recipe ;)

~ Page Changes ~

My first post was a recipe for what I had for dinner lastnight, however I am going to make a page for some other recipes that I have already made. I will probably have a page with somefrugal tips and meals on a budget as well as a  party food page and possibly a page for enternaining/ gourmet food. Hope you all enjoy and i will try to get as much up as soon as possible ;)

Honey Garlic and Ginger Pork Chops with Rice and Veggie Side

For last nights dinner I made wonderful pork chop with a pan sauce along with a side of rice and normandy veggies.
~ Ingredients ~
- Your favorite cut of pork chops
- Honey- Clove of Garlic- Grated ginger - Butter-Salt and Pepper
About 45 minutes before your ready to start cooking dinner you will need to pull out a big plastic container with a lid for marinading. Take the honey. grated ginger and minced garlic and add together in a bowl. I like to heat it up a little bit to make it easier to stir around. next using a basting brush, baste the pork chops with the marinade on both sides and dont forget to add sat and pepper. Let them marinade for about 45 minutes. In your sautee pan add about a tablespoon of butter and coat the pan. Add the pork chops and cook on both sides until there is no more pink in the middle. I like to cook it a little low and slow at first so they don't get burned on top before done in the middle. Remove pork chops from pan when cooked and add another tablespoon of butter to the pan to finish off the sauce. Pour over pork chops and enjoy with your favorite sides.
