Pulled Pork BBQ Quesadillas

This is a recipe that I randomly made up in my head and I have to say...MMMMMMMMMM.
This was amazing! I was trying to figure out something we could have that was different than normal. I was going to make fajitas quesadillas and thought, "We have chicken all the time, what is something new that I can make?". Publix had Curly's Sauceless Pulled Pork on sale BOGO and that got my brain working. I didn't want the usual pulled pork sandwich, we have those often enough. So......this is what I came up with!

Ingredients-

2 Lg Sweet Onions
2 Packages Curly's Sauceless Pulled Pork
Sweet Baby Ray's BBQ Sauce ( or whichever brand you like)
Cheddar Cheese (or your favorite kind of cheese)
Tortillas
Butter (softened)
Cooking Oil (I use grapeseed oil)


1. Slice two large sweet onions into thin to medium slices. Place 1-2 tbsp of butter in a skillet over medium to high heat, as well as 1-2 tbsp of oil. Once the butter is melted and bubbling, add the onions. Add salt and pepper.  Cover the onions to allow them to sweat and cook down until they are tender and sort of brownish.

2. Place both packages of Curly's Sauceless Pulled Pork into a saucepan and cook until all broken down and cooked through.

3. Butter one side of each tortilla.

4. In a lg skillet over medium heat, add the tortilla butter side down.

5. Spoon on the pork as well as some of the onions.

6. Sprinkle cheese over top and drizzle some bbq sauce.

7. Add the other tortilla, butter side up.

8. Now time to squish. I used a round cake pan on top of the quesadilla and added four cans in the pan to push down and get the bottom of the quesadilla cooked.

9. Flip and repeat.

10. Cut with a pizza cutter into fours and enjoy! I served ours with extra bbq sauce on the side.

I hope you guys try this recipe. It was seriously amazing!









Brunch Biscuits and Gravy

Good afternoon everyone! I will have two meals that I will be adding today. The first is going to be our brunch from this morning. I made to die for biscuits and gravy, as well as fried eggs and some Publix pecan creme cake. So let's get started!

1. Cook the sausage. I used regular ground breakfast sausage from Wal-Mart, which you can see in my haul video at www.haulershaven.com.

2. You can drain the sausage when it is cooked through, I don't because I think it adds extra flavor and if you're making biscuits and gravy, who's really counting the calories anyways.

3. I use packaged gravy mix, I recommend using the regular country gravy and not peppered or sausage flavor. This way you can season to your preference.

4. I add the water straight to the fresh cooked sausage undrained.

5. Fix the gravy according to the package instructions.

6. Once thick, add biscuits and enjoy.

Yummy Gondola Bread

This bread is the best I've probably ever had. It's sweet, however you can top it with butter, cinnamon and sugar or butter, garlic and salt. It's great either way. I made 2 loaves last night so one was garlic bread with dinner and one was cinnamon bread for breakfast. Ingredients : •1 c water •1 egg, beaten •1 Tbsp oil •3 1/3 c all-purpose flour •1/2 c sugar •1 tsp salt •2 tsp yeast The easiest way to make this bread is with a bread machine. Add all of the ingredients into the bread machine in order as shown. Put machine on dough setting. When done, take out and form into two loaves. Put on cookie sheet that is either greased or lined with parchment paper. Let rise for around an hour. Bake at 350 for 10-14 minutes.

Warm Sausage and Mushroom Dip

This dip is absolutely amazing, you can make it for a party or for your family at home!
~Ingredients~
- 1 Hot Jimmy Dean Sausage Roll
- 1 container fresh sliced mushrooms
- 1 square cream cheese pouch
- garlic powder, salt and pepper to taste
Brown the sausage until cooked through and somewhat crispy.
Drain.
Add mushrooms and cook until done.
In a mixing bowl combine sausage, mushrooms, cream cheese and spices.
Enjoy on slices of crusty baguette.

Teriyaki Pork Burgers with Grilled Pineapple

These burgers are so good they'll leave you wanting seconds!
~Ingredients~
-1lb Ground Pork
- 2-3 tbsp bread crumbs
- 1/4 cup teriyaki sauce
- a Splash of milk
- garlic powder, salt and pepper to taste
- 1 Can Dole Pineapple Slices in 100% Fruit Juice
- 4-5 tbsp more of teriyaki sauce
- 1/4 cup Hellmann's Mayo with olive oil
- a Splash of milk
- Garlic powder, salt and pepper to taste
- dash of Italian seasoning
- your favorite hamburger buns
Mix the ground pork, bread crumbs, splash of milk, garlic powder, salt, pepper and 1/4 cup of teriyaki sauce all together until everything is incorporated.
Make into patties.
I like to do these on the grill so place on grill and cook until cooked throughout and crispy on the outside.
Right after you put them on the grill, take a container with a lid and add the can of pineapple with the juice as well as the 4-5 tbsp of teriyaki sauce.
Let marinade together for about 10-15 min.
Place pineapple slices on the grill until there are grill marks on both sides and they turn a somewhat brownish color.
In a mixing bowl, add mayo, milk, about a 1/4 cup of the pineapple/teriyaki marinade, garlic powder, salt, pepper and Italian seasoning.
Whisk together until all elements are incorporated.
Assemble your burgers however you like. I like to put the burger first then the pineapple and then some sauce.
Serve with a side salad or whichever you prefer and enjoy!

Tyson Grilled and Ready Chicken Breasts with Brown Rice and Veggies

I had some coupons that I needed to use before they expired so I  grabbed some Tyson Grilled and Ready frozen chicken Breasts and dressed them up a bit!
I took some soy sauce, teriyaki sauce and garlic A1 sauce and whisked it all together and brushed the top of the chicken Breasts with it. Then I put them in the oven for 20 min at 375. They came out sooooo tasty and juicy. I made up some brown rice and some broccoli, cauliflower and carrots and that was dinner for tonight! Very filling and nutritious especially cause my largest portion was the veggies. Everyone enjoy!
